Vegan Mac & Cheese

For those who love cheese, but can’t have it.

Ingredients

🍲 Pasta

your favorite pasta – cooked! πŸ˜‰

πŸ§€ Sauce

1 tablespoon olive oil
1 onion
a few garlic cloves
about 600 ml soy milk
spices: dried veggies, salt, sweet paprika, hot paprika, nutmeg
4 tablespoons nutritional yeast (roughly πŸ˜‰)
2 tablespoons flour

🌿 Toppings

vegan cheese – for sprinkling
freshly ground pepper
garden cress

Preparation

Heat the olive oil in a pot and sautΓ© the chopped onion until translucent.
Add chopped garlic, pour in the milk, and mix in the spices and nutritional yeast.
Blend everything together (no need to remove from heat).
Add the flour and blend again until smooth.
Keep stirring until the sauce thickens.

Combine with the cooked pasta and stir well.
Serve topped with vegan cheese, freshly ground pepper, and a sprinkle of cress.
