Express Soup

A super quick, warming tofu curry soup with rice noodles 🍜


🔹 3 servings 🔹 Preparation time 15 min


Ingredients

½ liter water
1 red onion
1 yellow bell pepper
1 large tomato
1 block of tofu
1 can of coconut milk
handful of dried mushrooms
2 tbsp curry paste
salt
nigella seeds
parsley
rice noodles (200 g)

Preparation

Add the chopped onion, pepper, tomato and tofu to boiling water in a pot. Add the coconut milk, mushrooms, curry paste, salt, and nigella seeds (season to taste).

Cook the rice noodles according to the package instructions. Place the noodles on plates, pour the soup over them, and serve with parsley (or not 😉).
