Oven Donuts

Baked Donuts, a quick, spontaneous baking session so that @Nuwisha could bring something other than candy to his adult kids at work 😛.

🍩 Donuts

1 cup soy milk
3 tbsp coconut oil (this time kitchen temperature made it liquid in the jar)
½ cup erythritol
a pinch of salt
1 tsp cane sugar
1 sachet instant yeast (8 g)
3½ cups wheat flour

Pour the milk into a small pot, add the coconut oil, erythritol, and a pinch of salt. Gently warm it up until the ingredients combine. The mixture should be warm, not hot 🙂.
In a bowl, combine the teaspoon of sugar, yeast, and 3 cups of flour. Mix, then gradually pour in the warm liquid from the pot. Knead the dough by hand, adding the remaining half cup of flour gradually (you may not need all of it, or you may need a tiny bit more). The dough should come away cleanly from your hand and the bowl, and be elastic and firm. Leave the dough ball in the bowl, cover with a cloth, and forget about it for an hour.
I was worried it wouldn’t rise, but I shouldn’t have been. Apparently erythritol doesn’t bother yeast at all — it rose beautifully. The dough became elastic and slightly fluffy 🙂.
Place the risen dough on a lightly floured surface and roll it out to 1–2 cm thickness. Use a glass to cut circles and a shot glass to cut the holes. Transfer the donuts onto a baking tray lined with a silicone mat (9 pieces per tray — don’t squeeze in more, they grow in the oven!). Repeat until all dough is used. (Use the scraps to make a little squishy dough ball!)
Preheat the oven to 180°C, top–bottom heat. Let the donuts rise a bit more while the oven heats. Bake for 14 minutes. (They will rise beautifully and start to lightly brown — that’s your cue to take them out and put in the next batch.)

🍫 Toppings

1 bar of chocolate
1 tbsp rapeseed oil
shredded coconut
colorful sprinkles (I used leftover gingerbread sprinkles 😉)

Break the chocolate into pieces and melt it with the oil in a bowl over a water bath (choose a bowl that makes dipping the donuts easy).
Dip the still-warm donuts (but not so hot that you burn your fingers!) into the chocolate — upside down into the bowl — lift them out, and sprinkle with coconut or sprinkles. Set aside to cool, then store in the fridge (assuming you can resist eating them all while still warm 😛).
